Darbo Vadovė: Prof. dr. Gintarė Zaborskienė. Magistro darbo apimtis: 32 puslapiai. santrauka, summary, santrumpos, įvadas, literatūros apžvalga, tyrimo medžiagos ir metodai, tyrimo rezultatai, rezultatų aptarimas, išvados, rekomendacija, literatūros sąrašas. Rengiant darbą panaudota 40 literatūros šaltinių, 5 lentelės ir 5 paveikslėliai. Darbo tikslas: nustatyti ir palyginti riebalų rūgščių sudėtį tomis pačiomis sąlygomis augintų ančių ir žąsų vidiniuose ir poodiniuose riebaluose. Darbo rengimo vieta: magistro baigiamasis darbas buvo atliktas Lietuvos sveikatos mokslų universitete, Veterinarijos akademijoje, Maisto saugos ir kokybės katedroje. Tyrimo objektas ir metodai: atsitiktine tvarka pasirinktų 5 mėnesių amžiaus ančių ir žąsų vidiniai ir poodiniai riebalai. RR kiekis mėginiuose buvo nustatytas dujų chromatografijos – masių spektrometrinės analizės metodu. Rezultatai: Didžiausią procentinę dalį iš visų SRR sudarė C16:0, kurios daugiausiai nustatyta (24,57 ± 0,73 nuo BRRK) PA vidiniuose riebaluose. PA ir MA vidiniuose riebaluose buvo daugiau SRR nei poodiniuose (p<0,05 abiem atvejais). Didžiausią procentinę dalį iš visų MNRR sudarė C18:1n9c, kurios didžiausias kiekis (56,93 ± 1,59 nuo BRRK) nustatytas IBŽ poodiniuose riebaluose. Didžiausias procentinis PNRR kiekis (20,02 ± 0,42 nuo BRRK) nustatytas MA poodiniuose riebaluose (p>0,05 visais atvejais). Didžiausia procentinį kiekį iš visu PNRR sudarė C18:2n6c. IBŽ vidiniuose ir poodiniuose mėginiuose omega 6 ir omega 3 santykis buvo artimesnis PSO rekomenduojamam nei nustatytieji abiejų rūšių ančių vidiniuose ir poodiniuose riebaluose. Remiantis gautais tyrimų rezultatais rekomenduojama vartotojams rinktis žąsienos riebalus dėl mažesnio SRR kiekio ir geresnio omega – 6 ir omega – 3 santykio, lyginant su antienos riebalais.
Work volume: 32 pages. Structure: summary, abbreviations, introduction, literature review, research material and methods, research results, discussion on the results, conclusions, recomendation, list of literature. 40 literature resources were refferred to, 5 tables and 5 pictures were used in this work. The aim of the work: to analyze and compare the fatty acid content of the internal and subcutaneous fat of ducks and geese reared under the same conditions. The place of work: Master‘s final work was produced at the Department of Food Safety and Quality in Veterinary Academy of Lithuanian University of Health Sciences. Research object and methods: randomly selected 5 month old internal and subcutaneous fat from ducks and geese. The amount of fatty acids (FA) in the samples was determined by gas chromatography – mass spectrometric analysis. Results: The highest percentage of all SFA was C16:0 FA (24.57 ± 0.73 of TFAC) from pekin duck (PD) internal fat. Both PD and MD had higher SFA count in internal fat when compared to subcutaneous fat (p< 0.05 in both cases). The highest monounsaturated fatty acid (MUFA) count in all tested samples was found in Italian white goose (IWG) subcutaneous fat (58.28 ± 1.67 of TFAC). The highest percentage of all MUFA was C18: 1n9c (56.93 ± 1.59 of TFAC) in IWG subcutaneous fat. The highest percentage of polyunsaturated fatty acids (PUFA) (20.02 ± 0.42 from BRRK) was found in MD subcutaneous fat (p> 0.05 in all cases). The highest percentage of total PUFA was made up by C18:2n6c in MD subcutaneous fat. The ratio of omega - 6 to omega - 3 in internal and subcutaneous fat was calculated and compared to the WHO recommendations. Based on the results of the research it is recomended that consumers choose geese fat due to their better omega – 6 to omega – 3 ratio and lower content of SFA in both subcutaneous and internal fat when compared to duck fat.
