This invention discloses a nutrients loaded emulsion, adapted to the needs of elderly with dysphagia, containing basic nutritional components, with viscosity between 1000 and 1500 mPas measured at a shear rate of 50/second at 25 °C and controlled release of loaded nutrients in the small intestine. According to the present invention, basic nutritional components (proteins, non-saturated lipids, polyphenols, vitamins A, D, C, B9 and B12, Zn, Se) are provided by loading them into different phases of emulsion water-in-oil-in-water. By using this nutrients loaded emulsion for manufacturing a food for dysphagia patients several benefits can be obtained: to protect loaded nutrients from degradation during technological process, to provide proteins and non-saturated fats, to increase viscosity of formulations and to control the release of loaded nutrients during digestion in small intestine.
