Those amounts and composition of ω-3 fatty acids were determined by CG method in samples of cooked and cool smoked sausages with added vegetables oils. Sausages were prepared in manufacture and selected samples were tested during refrigerated storage. Sensory attributes of the sausages were established. Fat phase was analysed in the cooked and smoked sausages. The following characteristic were determined: fat acidity, peroxide value, free fatty acids and composition of fatty acids. The optimal level of ω-3 fatty acids was attributed best sensory parameters, optimal physical-chemical and oxidative characteristics were established.
