{"id":61773,"date":"2022-05-12T07:27:55","date_gmt":"2022-05-12T04:27:55","guid":{"rendered":"https:\/\/lsmu.lt\/?page_id=61773"},"modified":"2023-06-28T14:00:00","modified_gmt":"2023-06-28T11:00:00","slug":"department-of-food-safety-and-quality","status":"publish","type":"page","link":"https:\/\/lsmu.lt\/en\/about-lsmu\/structure\/veterinary-practice\/faculty-of-veterinary-medicine\/department-of-food-safety-and-quality\/","title":{"rendered":"DEPARTMENT OF FOOD SAFETY AND QUALITY"},"content":{"rendered":"\n<p class=\"wp-block-paragraph\">The mission of the Department of Food Safety and Quality is to provide quality training of veterinarians, veterinary food safety and food science specialists in accordance with the requirements of the relevant study programmes.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">HISTORY<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">The Institute of Food Hygiene was established on the basis of the Food and Feed Laboratory of the Veterinary Academy on 1 September 1940, and Prof. Dr. J. Nainys was appointed as its Director. In 1946, the Institute was reorganised into the Department of Veterinary-Sanitary Expertise, and in 1948 \u2013 into the Department of Veterinary-Sanitary Expertise and Zoohygiene. It was headed by Prof. J. Nainys until 1973. In 1974, Dr. V. Ie\u0161mantas became Head of the Department, and in 1977, the position was taken over by Assoc. Prof. Dr. V. Skimundris. In 1989, the Department was renamed the Department of Zoohygiene and Food Sanitation. From 1990, it was headed by Assoc. Dr. J. Vaitkus, and from 1995 \u2013 by Prof. Dr. B. Bakutis. In 2004, the Department was renamed the Department of Food Safety and Animal Hygiene. Since 2008, the Department has been headed by Prof. Dr. M. Malakauskas. On 1 July 2011, the name of the Department was changed to the Department of Food Safety and Quality.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">In 2000, the Mycotoxicology Laboratory was established at the Department. In 2005, as a result of further expansion of the Laboratory&#8217;s activities, the name of the Laboratory was changed to the Animal Welfare Research Laboratory. The Laboratory for the Safety and Quality of Animal Food Raw Materials was also established under the Animal Health and Animal Raw Materials Quality Centre under the NEMUNAS Valley activity framework.<\/p>\n\n\n<\/div>\n<\/div>\n\n<div class=\"page-content\">\n\n\t<div class=\"container\">\n\t\t\t\t\t<div class=\"prose md:prose-lg\">\n\t\t\t\t<h2>OUR ACTIVITIES<\/h2>\n\t\t\t<\/div>\n\t\t\t\t\t\t\t<div class=\"tabs-h mt-10\">\n\t\t\t\t<ul class=\"js-tabs full-color-tabs\">\n\t\t\t\t                    \t\t\t\t\t\t\t\t\t\t\t<li class=\"current\" id=\"studies\"><a href=\"#tab-01\">STUDIES<\/a><\/li>\n\t\t\t\t\t\t\t\t\t\t                    \t\t\t\t\t\t\t\t\t\t\t<li  id=\"research\"><a href=\"#tab-02\">RESEARCH<\/a><\/li>\n\t\t\t\t\t\t\t\t\t\t                    \t\t\t\t\t\t\t\t\t\t\t<li  id=\"projects\"><a href=\"#tab-03\">PROJECTS<\/a><\/li>\n\t\t\t\t\t\t\t\t\t\t                    \t\t\t\t\t\t\t\t\t\t\t<li  id=\"collaboration\"><a href=\"#tab-04\">COLLABORATION<\/a><\/li>\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t<\/ul>\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t<div class=\"tab-c bordered active\" id=\"tab-01\">\n\t\t\t\t\t\t\t<div class=\"prose md:prose-lg\">\n\t\t\t\t\t\t\t\t<p>The Department delivers training for future veterinarians (integrated study programme \u201cVeterinary Medicine\u201d). Since 2004, the Department has been coordinating the training of veterinary food safety specialists (full-time and part-time first- and second-cycle study programmes \u201cVeterinary Food Safety\u201d). Since 2013, the Department has also been coordinating the training of specialists under the study programme \u201cFood Science\u201d (full-time and part-time first- and second-cycle study programmes \u201cFood Science\u201d). The Department also teaches students of the Faculty of Animal Science (full-time and part-time first- and second-cycle programmes \u201cAnimal Science\u201d) and students of the Faculty of Medicine (full-time first-cycle programme \u201cMedical and Veterinary Biochemistry\u201d).<\/p>\n<p>The researchers at the Department are also actively involved in the implementation of third-cycle studies (doctoral studies) in Agricultural Sciences (Veterinary Medicine and Animal Science).<\/p>\n<p>The Department of Food Safety and Quality organises and coordinates student internships:<\/p>\n<ul>\n<li>Veterinary Medicine (integrated study programme): Food Hygiene Practice, 2 ECTS.<\/li>\n<li>BSc in Food Safety (first-cycle study programme): internship in the food industry, 5 ECTS; apprenticeship, industrial practice, 15 ECTS.<\/li>\n<li>MSc in Veterinary Food Safety: internship, 10 ECTS.<\/li>\n<li>BSc in Food Science: practice in general food raw materials and production technology, 5 ECTS; apprenticeship, 10 ECTS.<\/li>\n<li>MSc in Food Science: apprenticeship, 10 ECTS.<\/li>\n<li>MSc in Food Science (in English): apprenticeship, 10 ECTS.<\/li>\n<\/ul>\n\t\t\t\t\t\t\t<\/div>\n\n\t\t\t\t\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t<div class=\"tab-c bordered \" id=\"tab-02\">\n\t\t\t\t\t\t\t<div class=\"prose md:prose-lg\">\n\t\t\t\t\t\t\t\t<p>The research carried out by the Department researchers is tied to the study of food raw materials and product safety and quality. Distinct research directions focus on:<\/p>\n<ul>\n<li>Promotion of organic animal husbandry development and the evaluation of risk factors for organic products.<\/li>\n<li>Assessment of the impact of environmental factors on animal health and production, including the investigation of hygienic indices of water and feed, the search for new preventive measures and methods to stabilise microbiological processes in feed, feed raw material stores, and animal housing air; as well as the concept of animal welfare and the analysis of welfare indicators.<\/li>\n<li>Research on agricultural environmental pollution, animal behaviour, and animal welfare.<\/li>\n<li>Assessment of mycotoxin accumulation patterns in feed raw materials and feeds, and investigation of the prevention of mycotoxicoses.<\/li>\n<li>Assessment of the impact of animal diseases on meat quality and the risk to human health.<br \/>\nStudies of the molecular epidemiology and genetic diversity of zoonotic pathogens (Campylobacter, Yersinia, Listeria, etc.), properties of bacteria that determine their survival, adaptation, and spread in the food chain; studies of antimicrobial resistance of zoonotic pathogens and of the influence of certain food production technologies on quality and safety indicators.<\/li>\n<li>Development of prototypes for plant raw material, product, and nutraceutical production technologies, valorisation of by-products from the food industry into added-value raw materials and chemicals, investigation of chemical and biological safety and quality of food raw materials and products, reduction of chemical and biological contamination in plant and animal raw materials and products, and development of prototypes for functional microbial biomass technologies.<\/li>\n<li>Application of plants and their extracts in dairy product technologies and safety thereof.<\/li>\n<\/ul>\n\t\t\t\t\t\t\t<\/div>\n\n\t\t\t\t\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t<div class=\"tab-c bordered \" id=\"tab-03\">\n\t\t\t\t\t\t\t<div class=\"prose md:prose-lg\">\n\t\t\t\t\t\t\t\t<ul>\n<li>The Department of Food Safety and Quality at the Faculty of Veterinary Medicine (Veterinary Academy) of the Lithuanian University of Health Sciences (LSMU) (Prof. Mindaugas Malakauskas) is partnering with the Institute of Food Safety and Food Hygiene at the Veterinary Faculty of the Free University of Berlin (FUB) (Prof. Thomas Alter) to implement the project &#8220;Bacterial Genome Studies for the Assurance of Microbiological Food Safety&#8221;. This project receives its support from the Office of Higher Education of the Baltic States and Germany through the German Academic Exchange Service (DAAD), funded by the Foreign Office of the Federal Republic of Germany. The primary aim of this project is to expand and strengthen the scientific research competence and innovative capabilities in the field of bacterial genome studies at LSMU. The project execution will encompass a series of lectures, research conducted in collaboration between both project partners, and a final seminar to present the knowledge acquired and the results of the research to a wider audience. Project activities: 1.\u00a0 The series of remote lectures is designed to acquaint the participants with (i) bacterial genome studies in microbiological food safety, (ii) bioinformatics tools and their application to bacterial genome studies, and (iii) research results of the bacterial genome studies. 2. Individual researcher practical training (remote with a practical component in the lab), gathering together three joint groups, each of them conducting studies on specific bacteria (Campylobacter, Vibrio, or Arcobacter). 3.
