The protection of human health is one of the key objectives in the microbiological testing of raw food, food products and drinking water. The microbiological risk posed by contaminated food is one of the main concerns in public health. National control systems on raw food, food products and drinking water are based on relevant internationally or nationally validated tests and ensure that products for human consumption are free from microorganisms and their toxins or metabolites and do not cause risk to human health. The results of the tests performed on raw food or food products depend on the test method, and a specific reference method must be associated with each microbiological crįterion. Therefore, the test methods most commonly used for microbiological testing of raw food and food products for control purposes are accredited according to the recommendations of ISO (International Standardization Organization) or other international and national organizations. In third way, scientists obtain reliable results in the detection of microorganisms, their toxins or metabolic products, and the results of such research are recognized by other institutions around the world. The educational book “Microbiological examination of raw food and food products, drinking water and environment” is intended for students of the Lithuanian University of Health Sciences (LSMU) Veterinary Academy (VA), Faculty of Veterinary Medicine, Veterinary Medicine, Veterinary Food Safety and Food Science study programs, who are studying "Food control and safety", "Food microbiology and risk analysis" and "Microbiology" modules. The educational book can also be useful to others who are interested in microbiological research of raw food and food products, drinking water and environment. The microbiological testing methods for raw food and food products, drinking water and environment presented in this educational book can be used only for educational purposes.
