Tikslas: Nustatyti triušių poskerdiminio tikrinimo metu randamus pakitimus ir įvertinti triušienos kokybę.
Uždaviniai: 1. Atlikti 2007–2011 m. VMVT priešskerdiminio ir poskerdiminio tikrinimo ataskaitose registruotų triušių susirgimų analizę.2. ,,X“ mėsos įmonėje poskerdiminio tikrinimo metu nustatyti triušių skerdenose ir vidaus organuose randamus pakitimus. 3. Įvertinti triušių skerdimo technologinį procesą 4. Nustatyti triušių skerdenėlių sanitarinę kokybę.

Atlikta 2007–2011 m. ,,X“ mėsos įmonės ir VMVT priešskerdiminio, poskerdiminio tikrinimo ataskaituose registruotų triušių susirgimų analizė.
Remiantis Reglamentu (EB) Nr. 854/2004 ,,X“ mėsos įmonėje poskerdiminio tikrinimo metu buvo nustatomos ir duomenų rinkimo lentelėje fiksuojamos triušių patologijos, technologiniai skerdenėlių apdorojimo pažeidimai. Triušių masė nustatyta skerdenėles pasveriant AXM svarstyklėmis. Mėsos pH matuota skerdenos šlaunų raumenyse skerdykloje atvėsinimo patalpoje. Nustatytas pH po 45 min. (pH45), 24 val. (pH24 ) pH–metru „Inolab 3”, turinčiu kontaktinį elektrodą. Aerobinių kolonijų skaičius tiriamojoje mėsoje nustatytas remiantis bendruoju, kolonijų skaičiavimo 30°C temperatūroje metodu (ISO Nr. 4833:2003).
Atlikus 366 triušių skerdenėlių apžiūrą ,,X“ mėsos įmonėje, patologiniai pakitimai būdingi infekcinėms ligoms nenustatyti. Tarp pakitimų vyravo kepenų cirozė (2,73 proc.), kepenų lipidozė (2,18 proc.), kepenų hiperemija (0,54 proc.), širdies hipertrofija (1,37 proc.), širdies lipidozė (0,82 proc.), ascitas (1,09 proc.), poodinio absceso atvejai (0,54 proc.). Invazinės ligos (eimeriozė, triušių cisticerkozė) diagnozuotos 1,37 proc. triušių. Tyrimo metu paskersta vaikingų (2,18 proc.), liesų (2,46 proc.) triušių. Poskerdiminio tikrinimo metu nustatyti šie technologinio proceso pažeidimai: įpjovimai, įplėšimai, netinkamas galūnių ir vidaus organų pašalinimas, suterštos išmatomis ir plaukais skerdenėlės.
VMVT ir ,,X“ mėsos įmonės duomenų analizė parodė, kad nuo 2007 iki 2008 m. skerdžiamų triušių skaičius Lietuvoje sumažėjo 7,56 proc., o 2009–2010 m. sistemingai didėjo. Iš viso per paskutiniuosius penkerius metus Lietuvos skerdyklose prieš skerdimą patikrinta ir paskersta 68 519 vnt. triušių iš jų 5 500 vnt. ,,X” mėsos įmonėje.
Skerdžiamų triušių svėrimas prieš skerdimą parodė triušių masės atitikimą amžiui. Vertinant triušių masę skirtingu metų periodu nustatyta, jog vasaros laikotarpiu masė buvo mažesnė (p≤0,05) nei kitais metų laikotarpiais ir vidutiniškai sudarė 2,70±0,44. Rudens laikotarpiu skerdžiami triušiai turėjo didžiausią kūno masę.
Skirtingu metų laikotarpiu matuojant triušių skerdenėlių pH nustatyta jog vasaros metu pH45 buvo patikimai (p≤0,05) aukštesnis nei kitais metų laikotarpiais. Tuo tarpu žiemos periodu pH45 buvo patikimai žemesnis lyginant su kitais periodais. Matuojant pH24 rudens laikotarpiu triušių mėsos pH24 patikimai (p≤0,05) buvo aukštesnis nei kitais metų periodais. Palyginus pH45 ir pH24 patikimai (p≤0,05) didžiausias pH sumažėjimas paros laikotarpyje buvo nustatytas vasaros periodu t.y. pH reikšmė nuo 6,6±0,04 sumažėjo iki 5,8±0,03.
Bendras bakterijų skaičius triušienoje svyravo nuo 3,89±0,43 lg KSV/g iki 5,13±0,46 lg KSV/g. Rudens laikotarpiu paskerstų triušių mėsoje nustatytas didesnis bakterijų skaičius, nei kitais metų laikotarpiais. Bakterinė tarša atitinka leistinas normas.
Aim: To determine post-mortem changes in rabbit and evaluate the quality of rabbit meat.
Objectives: 1. To perform 2007-2011 SFVS pre-slaughter and post-mortem analysis of rabbit diseases. 2. To determine post-mortem changes found in rabbit carcasses and internal organs in ,,X” meat company. 3. To evaluate technological process of rabbit slaughter. 4. To determine sanitary quality of rabbit carcases.
Master's work was performed in Lithuanian University of Health Sciences, Veterinary Academy, Food Safety and Quality Department in 2011-2012. "X" meat company was chosen for post-mortem investigation of rabbit carcases. The analysis of “X” meat company and SFVS rabbits pre-slaughter, post-mortem 2007-2011 reports was performed.
According to Regulation (EC) No. 854/2004 in ,,X” meat company post-mortem rabbit meat inspection has been established and the data of rabbits carcass pathology, technological carcase processing disorders was collected. Rabbit carcasses were weighed by AXM scales. Carcass thigh muscles pH was measured in a slaughterhouse chillers after 45 min (pH45) and 24 h (pH24) with pH-meter ,,Inolab 3” having a contact electrode. Aerobic colony count in rabbit meat was determined using colony count at 30° C method (ISO No. 4833:2003).
Examination of 366 rabbits carcasses showed no pathological changes specific to contagious diseases. Liver cirrhosis was the most common pathology (2,73 percent.), liver lipidosis (2,18 percent.), liver congestion (0,54 percent.), heart hypertrophy (1,37 percent.), heart lipidosis (0,82 percent .), ascites (1,09 percent.), subcutaneous abscess cases (0,54 percent) were less frequent. Invasive diseases (eimeriosis, rabbit cysticercosis) were diagnosed in 1,37 percent of rabbits. In discused time period 2,18 percent pregnant and 2,46 percent thin rabbits were slaughtered. Post-mortem inspection identified the following process violations: cuts, tears, inappropriate elimination of limbs and internal organs, carcass contamination with feces and hair.
SFVS and ,,X” meat company data showed that from 2007 to 2008 the number of rabbits slaughter in Lithuania fell 7,56 percent and 2009-2010 was steadily increasing. In total over the last five years, Lithuania prior to slaughter in slaughterhouses inspected and slaughtered 68,519 units rabbits, 5500 units was inspected and slaughtered in ,,X” meat company.
The weigh of rabbits before slaughter showed mass conformity to age. Rabbit weight was lower during the summer period (p ≤ 0,05) than during other periods of the year, averaging 2,70 ± 0,44. Rabbits slaughtered in autumn had the highest body mass.
At different times during the measurement of rabbit carcases pH during summer pH45 was significantly (p ≤ 0,05) higher than in other periods of the year. Meanwhile, in winter pH45 was significantly lower compared with other seasons. Measurements of pH24 in autumn rabbit meat was higher (p ≤ 0,05) than in other periods of the year. After comparison of pH45 and pH24 it was found that the biggest decrease (p ≤ 0,05) in pH was in summer period when pH value decreased from 6,6±0,04 to 5,8±0,03.
The total number of bacteria in rabbit ranged from 3,89 ± 0,43 lg CFU / g to 5,13 ± 0,46 lg CFU / g. In autumn slaughtered rabbit meat had a higher bacterial count than in other times of the year. Bacterial contamination did not exceed the tolerance limits.
